I was super excited that I found a store that had cranberries early this November, I found them at the 99 cent store…. Of course you can get them now at the stores because thanksgiving and Christmas is a pond us… I just stocked up on them and put them in the freeze until I need them. So onto this wonderful recipe… again from fine cooking magazine winter 2004. This is a really easy recipe , the only thing is to make sure that the almond paste you buy is still good to use. It happened to me and I had to run out and get more plus tell the store that their almond pastes were expired.
Cranberry Almond Bundt Cake
Yields 1 large bundt Cake
1 1/2 cup all purpose flour, 1 1/2 tsp. baking powder, 1/4 tsp. salt, just whisk these together and set aside.
In the mixer, place 1 cup of unsalted butter, softened and 2/3 cup almond paste( 7 ounces tube) beat together on medium speed until smooth about 2 minutes Add 1 cup granulated sugar and beat until light and fluffy.
Beat in 4 eggs at room temperature, one at a time, stopping the mixer to scrape down the sides after each egg. Add1 tsp. of Vanilla and 1 1/2 tsp. almond extract .
With the mixer on low or stir add in the flour mix and 1/4 cup of room temperature milk ( I used 1%) , mix until the batter is smooth.
Take 1 1/2 cups of fresh cranberries and chop them lightly. Fold the cranberries into batter.
Here’s the part you need to make sure you spray your bundt pan very well. I spray my pan, I thought was well enough but the cake stuck to the pan… Man I was so upset:(
Spoon the batter into the prepared pan, spreading the batter evenly with the rubber spatula. Place on cookie sheet and slide into the preheated oven 350 F for 35 to 40 minutes.
Let cool for 15 minutes and then flip the cake on to the cooling rack , remove pan and let the cake cool completely before dusting with powder sugar.

Ok yes I know but See what I mean by Make sure you spray your bundlt cake pan well!!! The cake tasted amazing it did last but an hour my house 🙂
